- 2 lb. chuck roast (a 2 to 3-pound roast will work)
- 1 small yellow onion (thinly sliced)
- 6 cloves garlic (crushed)
- 1 1/2 Tbsp. dried Italian seasoning
- 1/2 Tbsp. dried oregano
- 2 tsp. granulated white sugar
- 1 tsp. salt
- 1 tsp. crushed red pepper flakes
- 1/2 tsp. black pepper
- 1 cup pepperoncini (jarred sliced, drained, reserve the juice)
- 1 cup giardiniera (jarred mild Chicago-style, drained, you can reserve the oil that it's packed in, but you don't need it for this recipe)
- 1 1/2 cups beef broth
- 1/2 cup juice (pepperoncini)
- 4 hoagie rolls
- 8 slices provolone cheese
- 1/2 cup pepperoncini (jarred sliced, drained)
- 1/2 cup giardiniera (jarred mild Chicago-style, drained)
