only thing i changed was i used shrimp instead of chicken. i am not sure why a gumbo wouldnt have shrimp. i may have added more garlic than what it called for. but its garlic. 😁 it was super tasty! will make it again!

Used leftover pulled pork instead of chicken and crushed tomato instead of whole. I also added homemade Cajun seasoning. I also added half a tablespoon of rice flour and a half a tablespoon of flax meal for extra thickening instead of gumbo file.
