So this is a great base of flavors to start but, cooking everything in the slow cooker leaves it lacking much flavor outside the tart/sweet flavors. Changes: Use a Whole onion + 8-10 sm garlic cloves, sautéed to brown. Add more oregano and cumin. Went slack a bit on the ground coriander to add fresher cilantro flavor later after slow cooking. Peppers (I used jalapeño, Anaheim and Serrano - slice 1/2 lengthwise, de-vein and seed. Broil 3-5 min @ 6" from broiler then chop and add. Used about a dozen tomatillo. Cut 4-5 in half and bake/broil til oozing and good amount of blackened skin. Blend these with some of the onion and garlic and salt. Cook for a long time to mellow the sweet/tart tomatillo. Add the beans (from a can is fine) and chicken until much later to keep them whole. Didn’t need to add the masa harina.
