- 1 pinch red pepper flakes
- 3 cloves garlic (smashed)
- 2 onions (chopped)
- 3 sprigs thyme
- 2 oz. diced bacon
- Parmesan (rind if you have one)
- 4 cups water
- 1/4 cup olive oil
- kosher salt (to taste)
- 1 cup carrots (finely diced)
- 3/4 cup diced celery (finely)
- cracked pepper (fresh, for serving)
- parmigiano reggiano (shavings of, for serving, optional if you are making the gratin)
- bread (toasted, for serving, optional if you are making the gratin)
- 2 garlic cloves (peeled)
- 1 handful fresh thyme leaves (if the strands are soft, no need to strip the leaves)
- 1 lemon

- 2 cups fresh breadcrumbs
