- 1 tsp. cumin
- 1/2 tsp. dried oregano
- 1/4 tsp. black pepper
- 1/4 cup orange juice
- 4 cloves garlic (minced)
- 1 Tbsp. butter
- 15 oz. black beans (drained and rinsed, I used low sodium)
- 1 Tbsp. cilantro (freeze dried)
- 2 cups quinoa (uncooked, or grain of choice)
- 15 oz. mango (can diced, in light syrup, drained well)
- 2 Tbsp. jalapeño pepper (diced, about half a pepper, ribs and seeds removed)
- 1 Tbsp. shallot (diced)
- 1 Tbsp. cilantro (freeze dried)
- 1 Tbsp. lime juice
