- 2 oz. bacon (2 slices, chopped fine)
- 2 onions (chopped medium)
- 1 red bell pepper (stemmed, seeded, and chopped medium)
- 1 tsp. cumin
- salt
- 6 garlic cloves (minced)
- 2 tsp. fresh oregano (minced, or ¾ teaspoon dried)
- 6 cups water
- 1 lb. dried black beans (2 cups, picked over and rinsed)
- 2 bay leaves
- 1/4 tsp. red pepper flakes
- 1/8 tsp. baking soda
- 1/2 lb. chorizo sausage (quartered lengthwise and sliced ½ inch thick, you can also remove the casing and crumble it or use smoked sausage)
- 1/4 cup fresh cilantro (minced, optional, I omit the cilantro b/c we don't like it)
