Ingredients

- 1 Tbsp. vegetable oil
- 500 grams veal (stewing, cubed and trimmed)
- 1 white onion (large, sliced)
- 1/2 clove garlic (crushed or chopped)
- 1 tsp. curry powder
- 1 red capsicum (large, sliced)
- 2 bay leaves
- 3/4 cup chicken stock
- 1/2 cup coconut milk (fresh, or 1/4 cup canned coconut cream)

Directions
- Heat the oil in a large frying pan and brown the veal. Add onion and garlic and saute, then add the curry powder and cook gently for a few minutes, stirring occasionally.
- Transfer veal mixture to slow cooker and add capsicum, bay leaves and stock. Cook on low for approximately 6 hours.
- About half an hour before serving, stir in coconut milk or cream. Remove bay leaves and serve with cooked rice, garnished with coriander or parsley.
