I have used this recipe many times because it is easy and always tasty. Here’s a tip: because there are just the two of us, I slice the entire roast the fist night and put in the frig. Then when I want to have it again,it’s already done and I warm just the amount for that meal..

This was very good. Took the chance and served to guests before trying ourselves and went over well! Would have liked more juice so will add another can of cranberries next time. Yes there will be a next time.
We cooked added some carrots and tiny potatoes in the last few hours and served with rice and salad for a simple meal.
