Description

Delicious slow cooker chicken! Goes great with garlic bread and/or mashed potatoes. Cooking sherry can be used instead of red wine.

  • 6 bacon slices (crumbled)
  • 1/4 cup flour
  • 1/4 teaspoon paprika
  • 4 boneless skinless chicken breast
  • 4 cups mushrooms (halved or sliced)
  • 1 garlic clove (minced)
  • 10 ounces condensed cream of mushroom soup
  • 1/2 dry red wine
  • 1/2 chicken broth
  • 2 bay leaves
  • 1/2 dried thyme
  • 1 cup chopped onion

    Directions

    1. Cook the bacon in a frying pan and set on paper towel to drain. Keep about a tablespoon of the bacon grease in the frying pan.
    2. Combine flour and paprika in a large resealable freezer bag. Put chicken breasts in bag, seal, and toss until coated. Add chicken breasts to frying pan, turn occasionally until browned. Put chicken in slow cooker.
    3. Add mushrooms, onion, and garlic to frying pan. Cook until onion begins to soften. Add the mushroom soup, red wine, chicken broth, and thyme. Heat until mixture just starts to boil. Pour over chicken in slow cooker. Place bay leaves on top.
    4. Cook on low for 7-8 hours or on high for about 4 hours. Discard bay leaves before eating.
