I used the apples I had on hand, and it came out very sweet--not surprisingly. If you want to use sweeter apples, cut down on the brown sugar. Otherwise this was really good, though it was more of a dessert applesauce than a meal. We added it to oatmeal for a sweet/savory kick, but we also had it hot like pie filling.
