- 3 Tbsp. pork spice rub (Stubb's)
- 12 oz. beer (I used a pilsner)
- 1 avocados (large or 2 small ripe)
- 1/2 cup plain greek yogurt (I used non-fat)
- 1/2 cup cilantro (loosely packed)
- 1/2 tsp. lime zest (freshly grated)
- 1 Tbsp. lime juice (freshly squeezed)
- 1/2 tsp. kosher salt
- 1/4 tsp. ground cumin
- 3/4 cup plain greek yogurt (I used non-fat)
- 2 Tbsp. butter (Stubb's Chipotle, Injectable Marinade)
- 31 oz. black beans (warmed)
- 2 flour tortillas (10-count packages)
- 2 cups Mexican cheese blend (the one I used had Monterey Jack, Cheddar, Quesadilla & Asadero)
- 1 red onion (small, minced, or a large shallot)
- cilantro leaves (for garnish, optional)
- 3 limes (cut into wedges)
