- 3 lb. skinless chicken thighs (boneless)
- salt
- pepper
- 3 Tbsp. vegetable oil
- 2 onions (minced)
- 2 celery ribs (sliced 1/4" thick)
- 6 garlic cloves (minced, I used more, because I love garlic)
- 1 Tbsp. tomato paste
- 2 tsp. fresh thyme (minced, or 1/2 t. dried)
- 1/3 cup all purpose flour
- 1/4 cup sherry
- 4 1/2 cups low sodium chicken broth (plus extra as needed, I used homemade stock)
- 4 carrots (peeled and sliced 1/4" thick)
- 2 bay leaves
- 1 cup frozen peas
- 3 Tbsp. parsley (freshly minced)
- 2 cups flour (all-purpose)
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 cup whole milk (I used 2%, and it worked fine)
- 3 Tbsp. unsalted butter (I used salted; it worked fine)
