- 1 yellow onion (or white, chopped)
- 4 garlic clove (minced)
- 2 jalapeños (seeded and diced, or sub 1 can mild green chiles)
- 28 oz. crushed tomatoes (can, fire roasted, regular crushed tomatoes will also be fine)
- 15 oz. black beans (can, BUSH’S®, rinsed and drained)
- 1 cup frozen sweet corn
- 5 cups lower sodium chicken broth
- 2 tsp. chili powder (ancho, or use regular chili powder)
- 2 tsp. cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper (optional)
- 1/2 tsp. salt (plus more to taste)
- freshly ground black pepper
- 2 limes (small, juiced)
- tortillas (strips , or crushed tortilla chips)
- 1 avocado (diced, large)
- sour cream (or plain greek yogurt)
- Monterey Jack cheese (Shredded, or cheddar cheese)
- cilantro
- green onions (Diced)
