- 1 cup frozen corn
- 15 oz. diced fire roasted tomatoes (organic)
- 2 cloves garlic (minced)
- 1 medium onion (chopped)
- 2 jalapeno peppers (finely chopped, depending on the heat level you want)
- 1 cup water
- 2 cups enchilada sauce (or try my authentic homemade enchilada sauce)
- 2 Tbsp. New Mexican chili powder
- 1 Tbsp. cumin
- 2 tsp. ground coriander
- 1 cup mexican blend cheese (shredded)
- 3 green onions (chopped)
- 1/4 cup fresh cilantro (chopped)

Good recipe, but like others, I needed to add a lot more water as it cooked to keep it from becoming too dry. I used the crock pot setting on my IP so I could saute the veggies, meatless crumbles & spices before adding the rest of the ingredients. I made my own taco seasoning, swapped a red bell pepper for the corn, added fresh mushrooms, a splash of red wine & used only one jalapeno. It was done after about 2 1/2 hours. I served it with roasted veggies to keep the meal lighter. I will most likely make this again. Add in some scrambled eggs & it would make a great filling for breakfast burritos!

I made some modifications to the measurements, but I put this mixture on top of tortilla chips that were layered with homemade guacamole...it is the best thing I have ever tasted. I have essentially ruined all other nachos for myself. #worthit

This was really good but I needed to add a lot of extra liquid. There is 1-1/2 cups of quinoa and only the same amount of water. Even with the juice from the tomatoes and frozen corn, I added at least another 1-1/2 cups of water. All in all, a very good recipe and will probably make again.

Easy to make and very tasty! I topped it off with avocado and sour cream when I ate it. Delicious!

The smell in the kitchen was so mouth watering, my entire family loves this recipe! Definitely recommend

this is soooo delicious , my husband hesitate when he saw this at first, but when he taste it he was impressed by how good it was.
