- 1 medium onion (thinly sliced)
- 3/4 cup dried garbanzo beans (soaked and cooked, or a 15-ounce can chickpeas, drained and rinsed)
- 2 medium sweet potatoes (peeled and diced, about 4 cups)
- 1 cup full fat coconut milk (or up to 1 can if you like lots of sauce)
- 1/2 cup chicken stock
- 15 oz. diced tomatoes (with juice)
- 2 Tbsp. curry powder
- 1 tsp. salt
- 1/2 tsp. cayenne powder (optional, depending on how spicy your curry powder is)
- 1 cup green peas
- 2 Tbsp. lemon juice
- cilantro (optional garnish)

This came out great - I cooked it longer than suggested - 10 hrs - so I didn’t have to cut the chicken it just fell apart and it was all delicious. If you want a heartier dish though I’d stick to recommended cooking time because after 10 hours everything melts together. Also I will make it again but I may swap the sweet potatoes for regular as it came out a tad sweet for me.
