I swapped a medium sweet potato for a couple of potatoes and used an extra carrot and onion since the fussy (big) kid in our family won't eat celery (or any herbs, gahhh); then - instead of adding potato starch - after cooking on low for 7 hours, I used the potato masher and smashed all the veggies until they thickened the stock into a chowder. Great flavour and texture, and an easy base recipe to play with according to the contents of fridge and pantry!

Well it looks good and it’s got a lot of flavor. 1 lb. of potatoes was way too much so I doubled up on chicken broth & thickener.
