- 2 stalks celery (roughly chopped)
- 2 carrots (skin on, roughly chopped)
- 1 white onion (or yellow, roughly chopped)
- 1 green bell pepper (roughly chopped)
- 1 head garlic
- 1/2 cup fresh parsley
- 1/4 cup fresh thyme
- 2 sprigs rosemary
- 2 bay leaves
- 1 Tbsp. whole peppercorns
- 10 cups filtered water (or enough to cover ingredients)

Family LOVED it, but I made some changes. Okay. Mine is very different. ;-)
12 cups water
Leftover roasted chicken
4 celery stalks - sliced (organic, garden-size)
4 carrots - sliced (organic, garden-size)
1 onion - chopped
3 bay leaves
1 tsp freeze dried cilantro
1 tbs Italian seasoning
3 tbs garlic - chopped
1 tsp thyme (dried)
Salt & Pepper to flavor
Bring to boil (on stovetop)
Reduce to simmer. Cook for 2 hrs w/top on pot
Strain broth into a bowl. Return to pot
Put chicken into bowl. Let cool to separate meat from bones. Throw out bones, carrots, etc.
Make soup:
Put chicken pieces back in broth
Add Kirkland frozen mixed veggies
Bag of frozen yuca
1 tsp turmeric (cuz it’s good for you)
2 tbs dried chopped onions
2 tsp freeze dried cilantro
3 Sazon Goya con azafran (envelopes)
Cook until yuca can be easily pierced w/fork
