- 100 grams chorizo (| 3½oz cooking)
- 100 grams lardons (| 3½oz, or cubed bacon)
- 100 grams ham hock (| 3½oz shredded)
- 14 oz. black beans (tins of, drained and rinsed)
- 1 onion (large, peeled and diced)
- 3 large garlic cloves (peeled and sliced)
- 1 cup chicken stock
- 2 oranges (plus small piece of orange peel)
- 1 red chilli
- 1 Tbsp. honey
- 2 tsp. red wine vinegar
- 2 bay leaves
- 1 Tbsp. olive oil
- 1 Tbsp. cornflour (cornstarch diluted in a little cold water.)
- 1 tsp. smoked paprika
- 1 pinch dried thyme
- chopped parsley (to serve)
- freshly ground pepper (to season)
- white rice (or steamed brown, to serve)
- orange wedges (to serve)
- 10.5 oz. spring greens (finely shredded or chooped)
- 2 red onions (finely chopped)
- 1 garlic cloves (minced)

- 1 Orange (small, juice of)
- 2 slices bread (toasting, blitzed into breadcrumbs)
