- 1 lb. pinto beans (soaked overnight and then drained and rinsed)
- 8 oz. bacon (cooked, crumbled, and drained)
- 1 onion (diced and browned)
- 6 cloves garlic (diced and browned)
- 1 cup barbecue sauce (prepared, read labels carefully if avoiding gluten)
- 1 cup brown sugar (lightly packed)
- 2 Tbsp. molasses
- 1 Tbsp. ground mustard
- 2 cups chicken broth
- 1 cup bourbon (if you don't want to use alcohol, use an unfiltered apple cider)
- 1 1/2 cups masa
- 1/2 cup all purpose flour (I use Pamela's Baking Mix as my gluten free all purpose flour)
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 1 Tbsp. white sugar
- 1 1/3 cups milk
- 1/2 stick melted butter (1/4 cup)
- 2 eggs

these were amazing! exactly the combination of ingredients I had on hand. I had a smoky whiskey that's just a little too rough to drink. it gave these beans an Incredible Smoky flavor. yummy!
