- 1 lb. black beans (soaked overnight and drained)
- 2 poblano peppers (roughly chopped)
- 1 jalapeno pepper (finely chopped, remove seeds for less heat)
- 2 cups sweet corn (fresh, from about 3 ears of corn)
- 2 zucchini (medium sized, cut into 1/2 inch chunks)
- 28 oz. diced tomatoes
- 3 Tbsp. chili powder (we used 3)
- 2 tsp. dried oregano
- salt
- pepper
- yogurt (or sour cream for serving)
- parsley (minced, or cilantro for serving)
