- red bell peppers (chopped, or whatever color you prefer)
- 31 oz. red kidney beans (drained)
- 15.5 oz. black beans (drained)
- 28 oz. crushed tomatoes
- 28 oz. diced tomatoes (undrained)
- 2 Tbsp. tomato paste
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. chili powder (ground)
- 1 tsp. cumin powder
- 1/2 Tbsp. dried parsley
- 1/2 Tbsp. dried basil
- 1/2 tsp. cayenne
- 1 cup beef stock
- 1 Tbsp. espresso grounds
- 1 Tbsp. fresh cilantro (chopped, optional)
- 4 oz. sour cream (optional)
- 4 oz. cheddar cheese (or pepper Jack cheese, shredded, optional)

I made this last night and let it sit overnight in the refrigerator. The flavors melded nicely and it was a very tasty chili recipe. I chopped red & green bell peppers and added a tablespoon of cocoa powder to the recipe to balance out the espresso. All in all, this chili recipe is a keeper.
