I've made this twice--once in the instant pot and once in a crockpot. I've used canned (cooked) beans both times, 8 strips of turkey bacon, 1/2 cup tomato paste instead of ketchup, yacon syrup for the molasses + maple syrup, and when I didn't have mustard, I threw a dash of ginger and cayenne in there instead. Both times it worked out great! My sister and dad apparently didn't care for baked beans in the past (I didn't know that before I made this recipe) and they both ended up liking them. My sister even went back for seconds. One downside to this recipe is that it makes a small batch of beans so you can serve it as a side. Next time, I might double and freeze any extras because we will definitely eat it. ;)
