- 2 Tbsp. fish sauce (or soy sauce, but fish sauce makes it better!)
- 2 cloves garlic (minced)
- 3 Tbsp. minced ginger (45ml+)
- 1 Tbsp. sugar
- 1/4 tsp. cayenne pepper (or to taste, optional)
- 1 tsp. kosher salt (or to taste)
- 1 1/2 lb. chicken legs (boneless, thighs or breasts. We prefer thighs for richer flavor.)
- 1 lb. potatoes (cut into 1" pieces)
- 2 medium carrots (peeled & cut into 1" pieces.)

Thiswas absolutely delicious! I followed the recipe exactly except I added more cayenne because we like things a little spicy. I also pretty much doubled the garlic and ginger because again we like everything very spiced. I served it over rice and it was really tasty
