  • 400 grams braising beef (cut into cubes)
  • 1 large onion (peeled and chopped)
  • 3 cloves garlic (peeled and minced)
  • 1 red bell peppers (chopped)
  • 240 stout (or other dark ale)
  • 1 beef stock cube (crumbled)
  • honey (1.5 tbsp.)
  • 50 boiling water
  • 1 ground coriander
  • 1 herbs (tsp mixed)
  • 1 smoked paprika
  • 2 cumin
  • 1 ground ginger
  • 1 hot chilli powder
  • 1 chipotle paste
  • 1 pinch salt (and pepper)
  • 1 chilli (chopped fresh, more if you like it hotter)
  • 2 tomato puree (tbsp)
  • Worcestershire sauce (2 tbsp.)
  • tomato ketchup (2 tbsp.)
  • 800 grams chopped tomatoes (tinned)
  • 2 chunks dark chocolate
  • 2 fresh coriander (tbsp, /cilantro chopped)
  • 400 grams kidney beans (drained and rinsed)
  • 420 grams mixed beans (drained and rinsed)
  • 200 grams tortilla chips (I like cool original Doritos)
  • 100 grams cheddar cheese (grated strong)
  • 1 bunch fresh coriander (roughly torn)
  • 3 soured cream (tbps)
