- 10 shallots (Banana, peeled and thinly sliced)
- 2 bunches spring onions (washed, trimmed and cut in 3 centimetre pieces)
- 500 grams button mushrooms (Sliced)
- 1 1/2 lamb stock (ltr good quality)
- 100 grams rock sugar (you can substitute Demerara)
- 1 piece ginger (peeled and very finely sliced)
- 6 cloves garlic (peeled and finely crushed)
- 6 Tbsp. dark soy sauce
- 4 Tbsp. rice wine (or Dry Sherry)
- 4 Tbsp. vegetable oil
- 2 Tbsp. sesame paste
- 1 Tbsp. tomato puree
- 6 star anise pods
- 4 cloves
- 2 pieces cassia bark
