Super fast and easy to make. Great flavor but I think I could have used a little more of the seasoning.

I didn’t have a bell pepper so I omitted. I also used rotisserie chicken because I always keep it pulled off the bone. I also didn’t have any regular rotel so I used a chipotle one & a mild one. I also added garlic to the onion. The results were great. I think that, for the next time, I’ll add some bell pepper & celery (a little holy trinity) as well as the chipotle rotel plus a regular can of roasted tomatoes with garlic & onion. Finally, I think I’ll add some sausage & have cheaters jambalaya.
