  • 6 ounces noodles (no-yolk, Ronzoni Healthy Harvest, or brown rice pasta for gluten free)
  • 1 tablespoon butter
  • 1 onion (medium, minced fine)
  • 3 tablespoons flour (gluten free use rice flour)
  • 1 3/4 cups fat-free chicken broth
  • 1 cup milk
  • 1 ounce sherry (optional)
  • 10 ounces baby bella mushrooms (sliced)
  • 1 cup petite peas (frozen, thawed)
  • 10 ounces tuna (in water, drained, I used albacore)
  • 4 ounces cheddar (50% reduced fat sharp, I used Cabot)

  • 2 tablespoons Parmesan cheese
  • 2 tablespoons whole wheat seasoned breadcrumbs

    So good!! We followed some of the suggestions in the comments and added in extra spices (I think I used garlic powder, onion powder, a good amount of pepper, paprika, and red pepper flakes.) Also used whole milk and mozzarella instead of skim and cheddar. Came out AMAZING!!! We will definitely make this again!

    A bit more work than using canned soup but so worth it. I jazzed it up with the spices a previous poster suggested: smoked paprika, anjou chili, garlic & plenty of pepper. Will definitely make again!

    Salt and pepper to taste are the death knell for ‘skinny’ recipes. If you’re going to take out the fat you have to put some seasoning in to give the pallet something for compensation. In this case, smoked paprika, garlic, and some ancho or cayenne (go easy so the heat doesn’t get overwhelming) make the dish pleasing and complex. And when adding pepper be liberal with it. So many things in this recipe will suck out the flavor, especially the flour and milk. You will end up with the blandest dish ever if you don’t get busy with the seasoning. Other than that the recipe came together nicely and was delicious and hearty.

    Very delicious! We did without sherry and mushrooms and still enjoyed very much. My wife is lactose intolerant so we used lactose free cheese and milk. I would recommend a light dusting on the breadcrumbs for a nice crunch. We poured a bit too much this time. I would also add more tuna next time. Great dish!
