- 2 Tbsp. virgin olive oil (extra-)
- 3 cups onions (chopped, 2 medium)
- 2 cups chopped celery (4 medium stalks)
- 1 cup chopped green bell pepper (1 large)
- 1 cup orange bell pepper (or chopped red, yellow, 1 large)
- 5 cloves garlic (minced)
- 4 cups cabbage (chopped)
- 3 cups yellow summer squash (chopped, about 3 medium sized ones)
- 2 cups carrots (chopped, 4 medium -I buy them pre-chopped to save time)
- 2 cups green beans (cut into 1-inch pieces, or frozen, thawed, fresh is definitely better, but frozen is easier)
- 8 cups vegetable broth (low-sodium, or chicken broth)
- 2 cups water
- 15 oz. tomato sauce
- 14 oz. diced tomatoes
- 15 oz. pinto beans
- 2 lb. ground turkey (cooked)
- 2 bay leaves
- 4 cups fresh spinach (chopped, or one 10-ounce package frozen chopped spinach, thawed)
- 1/2 cup fresh basil (thinly sliced)
