- 2 tsp. paprika
- 2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 14.5 oz. black olives (whole, sliced)
- 1 red onion (small, diced)
- 3 tomatoes (medium, chopped)
- 1 red bell pepper (finely chopped)
- 1/2 bunch green onions (sliced)
- 3/4 cup Monterey Jack cheese (shredded light)
- cream (Avocado, to taste, recipe below)
- salsa (Optional:, for serving.)
- 1 avocado (ripe)
- 1/2 cup greek yogurt
- 2 Tbsp. lemon juice (freshly squeezed)
- 1 clove garlic
- 3 Tbsp. extra-virgin olive oil
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground pepper (or to taste.)
