- 1/2 slice wheat bread (whole, to make homemade bread crumbs, about ⅓ cup whole wheat dry breadcrumbs I used Milton’s Multigrain bread)
- 1 tsp. extra-virgin olive oil
- 1 1/4 cups onion (finely chopped)
- 2 tsp. garlic (minced, ~2 cloves)
- 10 oz. frozen chopped spinach (thawed and squeezed dry)
- 1 1/4 cups cottage cheese (reduced-fat)
- 3 Tbsp. grated Parmesan cheese (divided)
- 1/4 tsp. italian seasoning
- ground pepper (Fresh, to taste)
- 1 egg white (lightly beaten)
- 1 1/2 cups pasta sauce (jarred, I love Classico Tomato Basil)
