These were DELICIOUS! I hesitated to make my own enchilada sauce because I’ve always used canned but it made such a difference! My husband loved these and couldn’t believe they were “light.” Takes some time with slow cooking the chicken first but it’s well worth it!

delicious. cut the adobo in half and was still a good spice level, u civered at end to brown. served with plain greek yogourt.

Very tasty! I added 4 oz of light cream cheese to the filling and used low-carb tortillas instead of whole wheat. It was soooo good!!

i cut the recipe in half and mow i wish i hadn't it was sooooo good although quite spicy my daughter loved the spice but for me i would use a lot less of the chipotle in adobo i also made the lime cilantro cauliflower rice also veryy good a very filling n satisfying meal!

Loved these. Doesn't lose any taste with the lower calories! Also good warmed up,the next day for lunch.

These are so good! Especially knowing they're lower calorie with so much flavor. We have made this dish several times!
