- 1 medium onion
- 3 oz. mushrooms (or 1 cup sliced)
- 3 cloves garlic
- 1/2 cup roasted red peppers (drained)
- 1/4 cup sun-dried tomatoes (julienne-sliced, packed in oil; regular, not Italian-seasoned)
- 1 lb. boneless, skinless chicken breasts
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. smoked paprika
- 1 1/2 tsp. Italian seasoning
- 2 1/2 cups reduced-sodium chicken broth (plus 1/4 cup more if needed)
- 8 oz. elbow macaroni
- 1/2 cup half-and-half (plus 1/4 cup more if needed)
- 8 oz. shredded Italian cheese blend (1 pkg.)
- 2 cups baby spinach
- 1/4 cup chopped fresh basil leaves (divided)
- 3 Tbsp. chopped fresh parsley
- 1/4 cup shredded Parmesan cheese

Directions
- Chop onion. Trim any tough ends from mushrooms, then slice. Mince garlic. Chop roasted red peppers. Drain sun-dried tomatoes, reserving 1 Tbsp. oil. Set vegetables aside. Cut chicken into 3/4-inch chunks.
- Heat olive oil in a large frying pan (at least 11 inches wide) over medium-high heat. Add chicken and season with salt, pepper, and paprika. Cook, stirring often, until chicken begins to brown and is cooked through, 5-6 minutes. Using a slotted spoon, transfer chicken to a bowl, leaving drippings in pan. Set chicken aside.
- Add mushrooms to frying pan and cook, stirring frequently until mushrooms are lightly browned and any liquid has cooked away, 6-8 minutes. Add onion and continue to cook, stirring often, until onion is tender, 3-5 minutes. Add garlic and cook until fragrant, about 1 minute.
