- 12 oz. sausage links (each, thinly sliced, I used cajun-style andouille sausages)
- 2 cups chopped tomatoes (Pomi, or one 14-oz can pure tomato puree*)
- 1 tsp. coarse kosher salt (or ½ teaspoon fine sea salt)
- 1/2 tsp. black pepper
- 1 tsp. coriander
- 1/2 tsp. red peppers (crushed)
- 16 oz. shrimp (frozen, briefly rinsed in cold water to separate them)
- chopped parsley (for garnish, optional)

This was really good! I used 5 Polidori Andouille sausages and omitted the red pepper flakes and it was very hot and spicy! It was perfect served it over spaghetti squash,
