- 3 green onions (or 2 Tbsp. chopped yellow onion)
- 1 bag refrigerated shredded hash brown potatoes (20 oz., such as Simply Potatoes; or use 6 cups frozen, thawed hash browns)
- 1 1/4 tsp. salt (divided)
- 1/2 tsp. granulated garlic
- 1/4 tsp. black pepper
- 4 Tbsp. extra-virgin olive oil (divided)
- 1/2 cup grated Parmesan cheese
- 1 cucumber
- 1 tsp. white wine vinegar
- 1 pinch sugar
- 1/2 cup sour cream (or plain yogurt)
- 8 oz. smoked salmon (sliced)

Directions
- Thinly slice green onions. In a medium bowl, combine potatoes (if frozen, break up any chunks), green onions, 1 tsp. salt, the granulated garlic, and pepper. Set aside.
- Heat 2 Tbsp. olive oil in a large nonstick frying pan over medium heat until shimmering. Add half of the potato mixture. Sprinkle with Parmesan. Cover with the remaining potato mixture and press down with a spatula to marry the layers together. Cook until potatoes are crisp and deep golden brown on the bottom, 10-12 minutes, reducing the heat if the bottom begins to get too dark.
- Remove pan from heat and run a spatula under the potatoes to release them from the pan. Place a flat dinner plate or pizza pan over the pan and using oven mitts, carefully invert the pan so the potato cake comes out onto the plate.
