Description
The simple combination of juicy sausages, caramelized onions, and tender-crisp bell peppers is always a crowd-pleaser, and this version gets extra flavor from Italian seasoning and a splash of white wine. For the most even cooking, look for sausages that weigh about 4 ounces each. Enjoy the recipe on its own, spooned over pasta or polenta, or piled into toasted hoagie buns. - 1 large onion
- 2 red bell peppers (or yellow bell peppers, medium)
- 1 green bell pepper (medium)
- 2 cloves garlic
- 2 Tbsp. extra-virgin olive oil (divided)
- 4 Italian sausage links (uncooked and preferably pork, about 4 oz. each, sweet or hot)
- 1 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup reduced-sodium chicken broth
- 1/4 cup dry white wine
- grated Parmesan cheese (optional)

Directions
- Quarter onion lengthwise and thinly slice crosswise. Cut bell peppers into 1/2-inch strips. Mince garlic. Set vegetables aside.
- Heat 1 Tbsp. olive oil in a 12-inch frying pan (preferably nonstick) over medium-high heat. Add sausages and cook, turning as needed and partially covering pan to catch spatters, until sausages are well browned, 7-8 minutes. (Sausages don’t need to fully cook through, as they’ll cook more in Step 5.) Transfer sausages to a plate and set aside.
- Add remaining 1 Tbsp. olive oil to the frying pan, then add onion, peppers, and Italian seasoning. Cook uncovered, stirring frequently, until peppers are crisp-tender, 5-8 minutes.
