I used boneless skinless chicken breasts. It came out amazing. Will definitely make this again. The potatoes and carrots needed to cook for longer than the recipe indicated.

What a great recipe! And for so many reasons....you can't beat a one dish meal for simplifying prep and cleanup; SO delicious AND nutritious AND satisfying (yet surprisingly low in calories, for those who care) all at the same time; and to top it all off, it makes a beautiful presentation! A definite winner.

Amazing! I love the recipes from HalfBakedHarvest. This was great because the flavors were actually in the chicken and potatoes, instead of the usual sauce. Sauce was simple and clean. I used 1/2 chicken broth and 1/2 cup white wine. Tgis dinner was a big hit at my house.
