- 15 oz. chickpeas (rinsed and drained, or 1½ cups [246 g] cooked chickpeas)
- 2 Tbsp. olive oil
- 1 yellow onion (diced)
- 2 cloves garlic (minced)
- 1 1/2 Tbsp. chili powder
- 2 tsp. cumin
- 2 tsp. dried oregano
- 1 cup frozen corn kernels (or fresh)
- 28 oz. crushed tomatoes
- 1 1/2 tsp. salt (or to taste)
- 8 oz. chips (unsalted corn tortillas, about 8 cups)
- 4 avocados (pits and peels removed)
- 1 Roma tomato (diced)
- 3 Tbsp. diced red onion
- 1/4 cup cilantro (chopped)
- 1 lime (Juice of)
- salt
- 1 jalapeños (ribs and seeds removed, diced)
- 3/4 cup raw cashews (soaked for 1–2 hours if you don’t have a high-speed blender, then drained)
- 1/2 cup water (plus more to thin if needed)
- 1 lemon
- 1 Tbsp. apple cider vinegar
- 1 clove garlic
- 1 tsp. cumin
- 1 tsp. dried dill
- 1 tsp. chives (snipped)
- 1/2 tsp. smoked paprika
- 1/2 tsp. onion powder
- 1/2 tsp. dried oregano
- 1/2 tsp. salt (or to taste)
- guacamole (The Best, or Store-bought guacamole, or avocado slices)
- ranch dressing (Creamy Cumin, (page 162) or store-bought southwest ranch dressing)
- radishes (Thinly sliced)
- red onion (or Diced white)
- fresh cilantro (chopped)
