- 1 lb. boneless, skinless chicken thighs (or breasts, cut into bite-sized pieces)
- 1/3 cup yellow onion (finely chopped sweet white/)
- 2 garlic cloves (minced)
- 1 tsp. dried oregano
- 1 pinch red pepper flakes
- salt
- freshly ground black pepper
- 3 cups zucchini (diced, /summer squash, I used a mix of zucchini and yellow squash)
- 1 cup quinoa (well rinsed)
- 1 cup water (or chicken broth)
- 1 cup sharp white cheddar cheese (shredded, or mozzarella, I used a mix of the two)
- chopped parsley (for garnish, optional)
