Description
Kabobs are a great way to cook fish, especially since it typically cooks in the same time as it takes the vegetables to become just tender enough. Here, meaty monkfish is threaded wtih zucchini, mushrooms, and cherry tomatoes, with bacon pieces providing extra smoky flavor. These are cooked in the oven for about 30 minutes, but you could just as easily grill them. Either way, be sure to soak wooden skewers in water to keep them from scorching during cooking.

Directions
- Start by cutting the ingredients into small cubes and prepare the kebabs by alternately sticking pieces of monkfish, zucchini, bacon, mushrooms and cherry tomatoes onto the skewers.
- Repeat until you have used all the ingredients.
- Place the skewers on a tray and season with salt, pepper, parsley, olive oil and a drizzle of balsamic vinegar.
- Cook in the oven at 200ºC (Celsius) for about 30 minutes.
