- 1 1/2 lb. boneless skinless chicken thighs
- 2 Tbsp. lime juice (half a juicy lime)
- 1 1/2 tsp. kosher salt
- 1 1/2 tsp. dried oregano
- 2 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. smoked paprika
- 1 garlic clove (minced or pressed)
- dashes hot sauce (few, optional)
- 8 flour tortillas (6-inch)
- olive oil
- 2 bell peppers (large, cut into thin strips, I use a mix of green, red and other colors, if I can find them)
- 1 sweet onion (or large yellow, halved and sliced thin)
- coarse salt
- 1 1/2 cups black beans (cooked, 1 15-ounce can, drained and rinsed)
- salsa (or pico de gallo)
- avocado (Sliced, or guacamole)
- shredded cheese (or sour cream)
- white onion (minced or or pickled red onions)
- chopped cilantro
- hot sauce
- lime wedges
- pickled jalapeño peppers

Seasonings are great! I double the veggies and added a little bit of heat. Perfect!

I used flank steak not chicken. Marinated for 5 hours. Turned out great. Everyone enjoyed. Made with all the sides
