- 2 crabs (live medium sized, total weight about 2 kg, 4.4 lb if you can only get cooked, that's fine too)
- 2 tomatoes (quartered)
- 2 Tbsp. tomato ketchup
- 2 Tbsp. tamarind (see how to prepare below)
- 4 Tbsp. water (for the tamarind)
- 2 Tbsp. vegetable oil
- 1/2 tsp. salt
- 1/2 tsp. white sugar (if you need it)
- 125 mL water
- 1 egg (lightly beaten)
- 1 handful coriander leaves (fresh, cilantro)
- 1 handful chives (chopped)
- 1 medium onion
- 3 chillies (red Thai or any bird's eye)
- 3 cloves garlic
- 5 cms fresh ginger
- 2 Tbsp. taucheo (soybean paste or use same amount of hoisin sauce, found in supermarkets)
