- 1/2 lb. yellow potatoes (approx. 2-3 small potatoes, diced into small cubes)
- 1 1/2 cups brown lentils (or green, rinsed)
- 28 oz. diced tomatoes (undrained)
- 1 qt. vegetable broth
- 2 cups water (add 1 extra cup if you like thinner soup)
- dried thyme
- 1 tsp. salt
- black pepper
- garlic powder
- ground cumin
- 1 cup fresh spinach (or kale, chopped)
- 1 Tbsp. lemon juice (approx. 1/2 lemon)

Loved it!! We elected to add some more seasoning to adjust it to our tates but it was a most hearty and filling soup!! Also, crazy easy to throw together. Prep the ingredients throw it together and let it simmer!! YUM!!

Delicious and simple to follow. Easy vegetarian dish with good protein, and something you can easily change up by adding other vegetables or spices.
