- 1/4 tsp. canela
- 1/4 tsp. cardamom
- 1/4 tsp. black pepper
- 1/4 tsp. turmeric
- 1/4 tsp. fennel
- 1/4 tsp. oregano (or thyme)
- 1 cup tomato purée (or basic tomato sauce)
- 1 1/4 cups water
- 1 1/4 tsp. sea salt
- 1/2 preserved lemon (or strips of lemon zest)
- 1 bay leaf
- 3 medium potatoes (peeled and cut into wedges)
- 5 carrots (peeled and cut into long pieces)
- 3 zucchini (small, peeled and halved into long pieces)
- 1 chilies (jalapeño/serrano, split in half and seeds removed, or not for a spicy tagine)
- 1/4 cup olives
- 1 handful dried cherries (or raisins or prunes)
- 1 handful finely chopped cilantro (or parsley)
