- 2 tsp. toasted sesame oil
- 1 small yellow onion (coarsely chopped)
- 2 oz. shiitake mushrooms (stemmed and sliced into 1/4– inch-thick strips)

- 3 carrots (cut into slices on the diagonal)
- 1 bunch scallions (thinly sliced, green and white parts separated)

- 1/2 lb. baby bok choy (trimmed and leaves separated, if not available, use regular bok choy, cut into 3-inch pieces)
