Description
Samosas are a traditionally Middle Eastern and Asian savory stuffed pastry. These samosas are simple and vegetarian friendly. Squares of puff pastry are filled with a savory filling featuring potatoes, peas, currants, a medley of spices including cumin, cinnamon, and chilli powder. You can make your own puff pastry or buy it premade before being baked a golden crisp. This recipe includes instructions for an accompanying yogurt-based raita sauce for dipping.

- 3 potatoes (medium, peeled and cubed)
- 80 grams frozen peas
- 35 grams dried currants (you can substitute raisins or prunes)
- 2 Tbsp. fresh cilantro (diced)
- 2 Tbsp. fresh lemon juice
- 1 tsp. cumin powder
- 1 tsp. chili powder (optional)
- 1/2 tsp. red chili pepper (diced, optional)
- 1/2 tsp. ground cinnamon
- 2 sheets puff pastry (thawed and carefully extended)
- 1 egg (beaten)
- 250 grams plain yogurt
- 2 Tbsp. fresh mint (diced)
- 1 pinch cumin powder

Directions
- Preheat the oven to 180 degrees Celsius.
- Line a baking sheet with parchment paper.
- In a pot, add the potatoes and peas. Cover with lightly salted water and bring the the boil. Simmer 10 to 15 minutes until the potatoes are soft. Drain.
