- 2 pinches saffron threads (Note 1, less than 1/2 tsp, loosely packed)
- 1/2 lb. chorizo sausage (fresh, Note 2, about 2 sausages)
- 2 Tbsp. olive oil
- 1 1/2 cups onion (finely chopped 1 small-medium onion)
- 1 cup red pepper (finely chopped 1 small pepper)
- 3 tsp. minced garlic (3 medium cloves)
- 1 cup diced tomatoes (drained, 1 28-ounce can)
- 1/2 lb. green beans (trimmed)
- 1 1/2 lb. large shrimp (peeled and deveined keep tails on if you like)
- 1 1/2 tsp. smoked paprika
- 1/4 tsp. red chili flakes (optional)
- 1/2 tsp. sugar
- salt
- pepper
- 1/2 cup white wine
- 3 1/4 cups chicken broth (plus 1/4 -1/2 cup more if needed)
- 1 large lemon (halved)
- 3 Tbsp. finely chopped fresh parsley
