Great!.. I just did the olive oil with salt and just a little pepper.. it’s a hit in our house

I wanted some way to use my zucchini in the oven along with the ribs I was baking. This turned out good. I adjusted the cooking time since the oven temperature was different from the recipe. Yum!

Can't believe how quick and tasty is this simple dish. I used Spanish smoked paprika and it was all there. Great one!

I have never been a huge zucchini fan, but this recipe is delicious!! I will work this into my regular cooking/meal prepping for the week
