- 2 carrots (large, diced)
- 2 stalks celery (diced)
- 1 onion (chopped)
- 3 cloves garlic (minced or pressed through a garlic press)
- 1 bay leaf
- 2 tsp. thyme
- 4 cups diced tomatoes (in their juice, or 3 C and a little extra water if using fresh)
- 1 cup water
- 1/2 cup brown lentils (or dry green, picked through and rinsed, or substitute one can of your favorite beans drained and omit the added water for a much quicker meal)
- 1 handful fresh parsley
