- 1 oz. dried shitake mushrooms (or 1/2 cup fresh)

- 1/2 cup scallions (sliced)
- 6 oz. ramen noodles (packs dried)
- jalapeño (optional: fresh, slices, for serving)

I had used dark meat thigh and drumsticks with the skin instead of the breast. An added a sprinkle of paprika on the skin with salt and pepper. I cooked the sliced jalapenos in the broth.

This REALLY came out great. Don't be afraid to chop up veggies and add them! Also, feel free to play with the ginger and garlic amounts.
NOTE: Taste as you go. This can get too salty depending on the broth you use!

Delicious and delicious and delicious. This is a good and tasty ramen -- the broth is great. The recipe is wonderfully written, with all the steps woven into each other in a great way. This is an excellent candidate recipe for using up leftover chicken from a roast (cuts out two dishes and half the effort).

Fantastic and super easy to make! I've made it 3 times now the only thing I've changed is adding a bit more stock. The only problem I have right now is that I can't find fresh ramen noodles and have to use the prepackaged kind.

Absolutely delicious! Super simple to prepare and easy to customise. Works with both beef stock and chicken stock.

Amazing!!! Recipe is a bit time consuming for a relatively simple meal but it's worth it. Very flavorful and wonderful on a cold winter night. Will definitely be making again, likely using a rotisserie chicken for convenience.
