- 3 Tbsp. butter (I use unsalted)
- 3 Tbsp. flour (I use unbleached all purpose)
- 1 cup cream (inspiring recipe uses milk, I had half a gallon of cream to use so I did)
- 1/2 tsp. salt (I use kosher)
- 1/4 pepper (ish teaspoon, I use freshly ground and do not measure)
- 1 gal. fresh spinach (size bag of, mature leaves are just fine)
- 1 pinch grated nutmeg (I used fresh, didn't measure, and dropped the nutmeg in the pan because sometimes Life happens. I fished it out and moved on)
